I was testing out another doughnut recipe the other day and instead of glazing them all with vanilla, I decided to have a little fun! I looked in my fridge and found some blueberries and then decided to use up some of the basil I have growing out in my planter! I love incorporating fresh herbs into sweets!
I wanted this glaze to be super fresh so I blanched the basil (boiled it in water for a few seconds and threw it in an ice bath, it preserves the color) and threw it in my “magic bullet” with some of the blueberries and milk! I replaced the milk amount in my glaze recipe with this mixture and ta da! I did end up adjusting the powdered sugar amount last minute to thicken it up.. which resulted in the little white spots you see on the donuts. (Those shouldn’t be there)
These Blueberry Basil Doughnuts had a really fresh flavor with a hint of basil and weren’t too sweet. Because the glaze is so fresh, you should eat these up as soon as possible. I didn’t have any trouble doing so, and if I can do it, so can you! 😉
I have decided to go another route with my testing. Of all the recipes I’ve tried thus far, I still haven’t been able to get the chewy part right. My idea of a perfect doughnut is for it to be nice and soft with that little chew at the end, you know, where the texture kind of mushes together a little.. but not too much. Anyways, I’m getting there! More tests to come, which mean more doughnuts to eat!
