When people find out I’m a Pastry Chef, the first thing I usually hear is:
“Omg, how are you not 300 lbs?! I would be if I worked at a bakery!”
I’ve definitely gone through phases of “I’m not eating anything from work anymore” to “Omg, I need this cookie…. right now.” At the moment, I am going through a sugar binge. All I want is cookies, sugary cereal, and more cookies. If this keeps up, who knows, maybe I will end up being “300 lbs”.
It also doesn’t help that I love savory and sweet together! Pretty sure I add a little sugar to everything I cook. So when it comes to cookies I like playing around with both as well. Herbs are the best! I love incorporating herbs into desserts! And when it came to deciding what I wanted to get for my first tattoo, thai basil seemed the most appropriate. It’s been about a month or so, and I still think it’s going to go away at some point, haha.
Have you noticed how bright and beautiful grapefruits are?! The flavor seems to be a bit hit or miss for people, but over the years I have grown to love it’s slightly bitter taste. When I was a kid, I would pour endless amounts of sugar on top and wait for it to melt and pour even more on! I always think back on how I ate as a kid and wonder how I didn’t get diabetes. #blessed. Haha For this recipe, I paired thyme with grapefruit! Mixing thyme leaves into the shortbread dough and making a glaze from the juice and zest of a beautifully ripe grapefruit!

My recipe generator is currently down, but here is the recipe the old fashioned way!
1/2 cup shortening
1/2 cup butter
1 cup powdered sugar
2 T thyme leaves
1 tsp vanilla extract
2 1/2 cup all purpose flour
1 tsp salt
Preheat oven to 375F
Cream the shortening and butter with powdered sugar
Add the egg, thyme leaves and vanilla extract
Add the flour and salt
Divide dough in half, roll out between two sheets of parchment and chill
Cut out desired shapes and place on cookie sheet
Bake for 8 to 10 minutes for cookies about 2 inches in size (lightly browned on edges)
1 C powdered sugar
4 tsp grapefruit juice
1 tsp grapefruit zest
Mix all ingredients together until smooth.
